This week for the "Party in the Kids' Kitchen," Marie brings you an Onion Cutting Tip for kids and I am bringing you a delicious kid friendly vegan guacamole recipe that my toddler helps to make a couple times a week. He knows that this recipe is an activity in the kitchen that he is welcomed to participate in. He takes his job of helping with food preparation very seriously and does a great job!
I'll be honest, for this easy and yummy guacamole recipe I usually just "dump" the ingredients into the bowl. That is also what I allow Little Bee to do as well, with a little supervision of course, especially for the salt! However, for the sake of a recipe, I will attempt to put one together for you.
Vegan Guacamole Recipe
1 medium - large ripe Avocado
1 tsp onion powder (optional - chop 1/4 of a white onion instead)
1/2 tsp garlic powder (I add more because I love a strong garlic taste or add one chopped garlic clove!)
2 tsp lemon juice
1/4 tsp salt
1-2 Tb Vegenaise (vegan mayonnaise) - Add as much as you want to add a creamy taste to the guacamole.
Directions: Open up and mash the avocado with a fork. Add the lemon juice to prevent the avocado from turning brown. (Also, another tip if you are going to store the guacamole for a day or two in the fridge - KEEP the avocado seed and place it inside the finished guacamole dish. It will help prevent your guacamole from turning brown!) Then add the onion powder, garlic powder, salt, and Vegenaise. Mix everything together well. Serves: 1-3 YUM!
